Baked Ricotta with Goat's Cheese and Herbs
1 3/4 fresh ricotta cheese
1/2 cup goat's cheese
1 egg yolk
2 tbsps chopped chives
2 tbsp chopped parsley
Kosher salt and cracked black pepper
Extra-virgin olive oil for drizzling.
Preheat oven to 320 degrees. Mix together cheese, egg yolks, herbs and salt and pepper. Divide into two scoops and place into a small greased muffin tray (as if you were making two muffins). Bake for 45 minutes. Once they are cool, remove from the tin and place onto a baking sheet (lined with foil), brush with olive oil and broil in a warm oven until golden. Serve cold with your favourite crisps. Makes 2.
